Onion tart on picnic

Hi!
This was the onion tart we carried with us to our picnic. It was very delicious and isn’t too hard to make. IT consists of bread or pizza dough, fresh cheese mixture and sauteed onions with chopped sausage. To be honest, the sausage wasn’t necessary, the sauteed onions give enough flavour, so you can just omit it for vegetarian version. I don’t know a good substitute for fresh cheese to make it vegan, but maybe some kind of smooth tofu can be a good substitute, coupled with few drops of lemon to give it a bit of tartness that goes beautifully with sweetness of onions. Anyways, here’s the recipe, I hope you give it a try 🙂

Onion tart recipe

The dough

300 g flour (glutenfree)
300 ml water
1 tsb salt
1/2 tsp yeast
1/2 tsb baking powder
1 Tbsp Oil

If using gluten free flour simply combine all of the ingredients and leave to sit for five to ten minutes, until you heat the oven to 225 °C (435 °F) and make the fillings, then knead the dough for one minute to combine it in a ball. And spread the dough in the baking tin lined with baking paper. The dough needs to be thin, but you can leave the sides of the dough a bit thicker so it holds the filling.

The onions and cheese filling

1 egg
3 heaped Tbsp cheese
2 pinch of salt
freshly ground pepper
2 medium sized onions chopped into half moons
1 bay leaf
1 Tbsp oil

Saute the onions on 1 Tbsp oil until they are translucent. When you add the onions to the pan add 1 pinch of salt and 1 bay leaf. Just before they are finished, add ground pepper.

For cheese filling combine the cheese, egg and salt and pepper until smooth . If needed add 1 Tbsp sour cream (this depends on the creaminess of your cheese). Check if it’s salty enough. You can first combine everything except egg, then check for saltiness and at the end mix in the egg.

Everything combined into onion tart

Now that everything is ready let’s make our onion tart. On the thinly spread dough put the cheese mixture and spread evenly. Then evenly spread the onions and if you want sprinkle with small dices of smoked sausage or ham. Bake in the heated oven for 20 minutes or until nicely browned. Leave it to rest and cool for 10 minutes then cut into squares. Sprinkle with fresh chives for decoration.

Enjoy warm or cold with a glass of wine or yoghurt. 🙂
