Sataraš - perfect summer treat

Hi,
Sataraš (satarash) is a perfect summer dish made from ripe tomatoes, paprika and onions. It can be eaten hot or cold, and for me, it is perfectly accompanied by simple rice. There are many recipes for sataraš, but my family has always made the most simple version there is – completely vegan and clean tasting. I prefer to taste all of the ingredients in the sataraš – paprika, tomatoes and onions. I don’t like to hide the taste of veggies with additional spices, meats or bacon, and I don’t like it to be too oily nor fat. This dish should taste like summer. If you want to eat meat, you can serve it with sataraš, but prepare it separately.

Needed for Sataraš

500 g / 1 lb onion
1 Tbsp oil
500 g / 1 lb fresh paprika
500 g / 1 lb tomatoes (fully ripe)
salt, pepper, cayenne pepper to taste
splash of water if needed

This dish doesn’t require fine chopping skills. Veggies can be chopped to whatever size and shape you want, this is how I prefer to make it. The amount of ingredients can easily be adjusted, the only rule is that there should be 1:1:1 of tomatoes, onions, and paprika. Also, please use ripe tomatoes. They have the biggest flavour and this dish depends on the flavour of veggies. Tasteless veggies have nowhere to hide here.

Chop onions to wedges. Then put them to the pot together with oil and leave them to simmer on medium to low heat. While onions are simmering, chop paprika in strips and add to onions. Let it all simmer and start immediately with tomatoes – chop them to wedges and add to the pot. Then add a splash of water and half a teaspoon of salt. Then cover with a lid and let it simmer until the veggies are fully cooked and there is a nice flavourful liquid/soup. Do not overcook veggies. You still want to taste them. Or as we say feel them under your teeth. They should be completely cooked and release their goodness to make the sauce but not fall apart.

Adjust the seasoning and serve with bread or rice. You can add the meat to the plate, but try eating it without meat. You won’t miss it, I promise.
