Sunny sandwiches

Hi,
these simple sunny sandwiches are great for brunch or breakfast. I don’t suggest using them for picnics because they have a fried egg in them and are not really easy for transport. But If you want to have something delicious and nutricious for your breakfast, then I suggest these.

Ingredients for sunny sandwiches

Sandwich bread, preferably dark and with various nuts and kernels
egg
smoked ham
lettuce leaves
thick yoghurt
salt,pepper, cayenne pepper

First step is to fry the egg so it has a beautiful yellow center. If you have that egg rounds then you can use them to make your egg have a form. Otherwise just fry the egg and then cut out the extra egg white.

While the egg is in the pan, toast the bread in toaster. You can use white sandwich bread, but it’s simply better to use the full dark bread. When the bread is toasted, spread a teaspoon of yoghurt and salt and pepper it. Then put lettuce leaves on bread and then the smoked ham.

Last add the fried egg on top of the ham, and sprinkle it with a bit of cayenne pepper. Make as many as you like and can eat. And serve with a garnish of parsley on the side. I like to eat mine by adding the parsley on the top of the egg, and then munching on the tasty sandwich 😛
