As always for Easter, I make my grandma Zlata’s Easter cheese bread. We traditionally eat it for Easter. My grandma makes it every year. I also started making it and since I’m now in Germany, a long long way from home, I will make my own. So I thought I could share the recipe with you. It turns out great even with my gluten-free flour and is a no-knead recipe that takes no time to assemble. It is a moist bread that can be eaten both warm and cold. I prefer to leave it to cool enough to eat it without any problems, but so that it still feels warm.
Grandma’s Easter cheese bread
1/2 cups of oil
1 cup yogurt
20 Tbsp (gluten-free) flour
1 large egg
Salt
baking powder
1 – 2 cups of fresh cheese. depends on your preference.
Combine all wet ingredients in a bowl. In a different bowl combine all dry ingredients. Slowly add dry ingredients to the wet and mix well. Best would be to sift the dry ingredients using that little hand sifter (such a great tool!). When it’s all combined, oil cake pan or some other round baking pan and put the mixture in. Spread evenly and oil the top with a bit more oil. Bake on 200°C(395°F) for about half an hour.
I usually bake it until it’s golden brown and check with a skewer. This bread is very moist and the skewer won’t be perfectly clean, but the bread should be firm and not liquid. If it looks like it’s still not cooked enough, cover it with foil and bake for a couple more minutes. Let cool a bit and enjoy!
