Potato Fresh Herbs Soup

Hi.
This is a soup an idiot can make. Really, if you can’t make this soup, there’s something wrong with you. Potato fresh herbs soup has just a couple of ingredients – potato, onion and fresh herbs, salt and pepper. That’s all you need. Really. Milk is optional. Fresh herbs is your choice. If you only have fresh parsley, then use fresh parsley. Do not use dried herbs. Only dried spices are allowed. Period.

Needed for potato fresh herbs soup

1 potato per person
half medium onion per person
1 glass of water per person
salt and pepper to taste
fresh herbs to your liking (parsley, chives, basil, dill, … whatever is available)

Dice the onion anyway you know. Big or small, doesn’t matter. You can even just quarter it. Put it in pot with 1 Tbsp oil. Brown it a bit so it develops the taste. Don’t burn it. Then add the diced potatoes and mix for 1 minute. Add water and salt. Leave it to cook until potatoes are done. Then cook one more minute, just in case.

Leave the soup to cool down a bit, and during that time chop the herbs. You can just chop the herbs a bit and then blend them with soup. Or you can blend the soup first then add the finely chopped herbs. If you like to add a bit more creaminess, you can add a little bit of milk. If the soup feels too thick then add a bit of water (or milk, if using vegan milk, don’t use coconut). Add salt and pepper to taste. Ladle into plates or bowls and enjoy! 🙂

P.S. add a bit of fresh herbs on top as a garnish and a dollop of yogurt, croutons, nuts or toast are also welcome. Just add whatever sounds scrumptious to you.
