Hi,
the biggest heatwave of the year has started and I want to eat something light. I prefer to go vegetarian and not eat meat during the heat, luckily my hubby doesn’t mind. This squash burgers recipe is one of the recipes that I enjoyed during my vegetarian years and I still enjoy it. Here I use pita bread and make them like gyros at other times I would use them instead of beef burgers to make a vegetarian version of a burger and serve them with side of fries.
Things needed for squash burgers
1 big summer squash
egg or egg substitute
1 Tbsp flour (I use gluten free)
2 Tbsp bread crumbs (gluten free)
pinch cayenne pepper
salt, pepper
extra bread crumbs or polenta (optional)
Remove the seeds from squash and grate it. You can remove the skin as well if it’s thick. Salt the squash well and leave it in fridge for an hour. Drain the squash and squeeze out the excess liquid, to get it as dry as possible and remove as much salt as possible. Add it to a mixing bowl and add egg, pepper, cayenne, flour and bread crumbs. Mix till well combined.
Heat the skillet with a bit of oil. Make the squash burgers and cook them on medium heat. Before cooking you can roll the burgers in bread crumbs or polenta to make them more crunchy. Do not fry the burgers in a lot of oil. Use only enough oil to keep them from sticking to the skillet but not so much to make them greasy.
Pita bread sandwiches
To make the sandwiches you need:
squash burgers
Gluten free pita bread
Lettuce leaves
Tomato
Tzatziki sauce
avocado sauce (optional)
onions (optional)
Cut the pita bread in half and spread the sauce over the inside of pita bread (it should be hollow, if it’s not then cut the hole). Add the squash burgers and the veggies and cover with a bit more of the sauce. You can sprinkle the burgers and inside of bread with cayenne or pepper flakes if you want to have them in hot version.
