I made this zucchini and carrot soup yesterday for lunch. I was surprised to see that my hubby actually liked it even though it had zucchini and coconut cream. This is a completely vegan friendly recipe that you should definitively try. Also you can use green zucchini, it will just have a bit different colour.
Recipe for zucchini and carrot soup
1 zucchini
1 big carrot or bunch of small ones
1/2 onion
100 ml coconut cream
2 cups water
salt,pepper, cayenne pepper
1 Tbsp vegetable or sunflower oil
To make this soup first chop onion and carrots and simmer them on oil until onion translucent. Then add zucchini sliced in half moons. Simmer a bit more then add water and pinch of salt. Cook on low heat until the veggies are completely cooked. Then put the coconut cream in blender and pour the soup on top. Blend it until smooth. Return to the pot and adjust seasoning. Also add freshly ground pepper and cayenne. And mix it all in. Then transfer to plates and garnish with a bit of chives and coconut cream.
