Smoked trout and fresh cheese canapes

Hi,
these simple canapes use pansies, amaranth leaves, and nasturtium leaves as decoration and in the fresh cheese cream. Smoked trout goes excellent with fresh cheese and crackers.

This time i didn’t bake my own crackers, I used store bought gluten free pepper crackers. They were delicious and piquant. You can use any crackers you want or make your own.

Needed for canapes

a package of Smoked trout
fresh cheese
sour cream
nasturtium leaves
amaranth leaves (these can be omitted)
a small batch of chives (i used 20 stalks/leaves if you want exact measure)
salt pepper
a small clove of garlic
crackers of your choice
small nasturtium leaves and pea tasting pansies for decoration

This is a quick recipe that is just mix and assemble. It should not take you a lot to do this and it can be done when the guests arrive.

I did 12 canapes of 5 cm in diameter. For this I added full 4 Tbsp of fresh cheese to the mixing bowl with 2 Tbsp of sour cream. Mix that well, then finely chop up garlic, so it is almost paste (us squeeze it in the cheese). Chop up chives and amaranth and nasturtium leaves and add to cheese with garlic. Mix everything well. Adjust the seasoning with salt and pepper.

Assembly

Put the cheese mixture into a bag and pipe it on the crackers. Then add a small piece of smoked trout on top. Garnish with pansies and small nasturtium leaves. Make sure that pansies you use are pea tasting. Not the sweet ones. If you don’t want to eat flowers, you can omit them or substitute them with pea shoots.

Leave canapes to rest a bit before serving. And then serve on a nice platter. I used my fancy wood platter for it. They are perfect with dry white wine or May wine.
