Celebrating Harvest with Bread Platter

Hi,
the time of harvest is already upon us. And to celebrate the beginning of harvest – Lammas or Lughnasadh, I made a simple bread platter with fresh homemade gluten free breads. I made a dark gluten free bread, from the buckwheat flour coupled with universal flour. And a turmeric or curcuma braided bread. This bread was made from both plain gluten free dough and gluten free dough with added turmeric. I used the same recipe for all of the doughs. You may add a bit more water to the buckwheat dough if it feels too dry.

Basic bread dough recipe

1 1/2 cups flour (gluten free, if making dark bread, 2 cups buckwheat flour, 1 cup universal)
1 1/2 tsp yeast
3/4 tsp salt
1/2 tsp baking powder
2 Tbsp melted butter
1 1/2 cups water

Mix the dry ingredients, add the butter and water. Mix well and knead for 1 minute if needed. The kneading of gluten free bread makes no sense since it contains no gluten, therefore no gluten can be activated and aligned by kneading. If you are note making a gluten free version, then you need to knead the bread until smooth and springy.

After all ingredients are combined(and you finished with kneading) leave the dough in warm place for about 2 hours or until double in size. Then knead for a minute or punch the big air bubbles out and model it in small loaves or braid it according to your wishes. Leave it in a baking sheet to rise for at least 45min. In the meantime heat the oven to 190°C (374°C). When the bread has risen enough bake it in a heated oven for 30min. Make sure not to use convention while baking bread. And add a few cubes of ice in the bottom of the oven while adding bread to bake. This will make a beautiful crust. When bread has baked, remove it from the oven and leave it to cool completely. I like to spritz it with a little bit of water, so make sure it gets enough moisture and crust acts much better.

Assemble the bread platter

On the platter:
breads
salt
red onion
salami or sausage or charcuterie
cheese
cherry tomatoes
nuts (pistacio)
cucumber
sour cream mixed with a little bit of salt and water with sprinked chives.
wooden board or platter of your choice

Add the biggest bread to your platter. Cut a few slices and lay them down. Since my bread was braided wreath, I added the tomatoes in the middle of the bread. With a basil sprig for decoration. Your other bread should go on the platter in a different angle and on the other side of the platter. Add the meat and cheese, then add the cucumbers. Now add the sour cream dip and pistacios. At the base of on of the breads, add wedges of onion and a teaspoon of salt. And our bread platter is complete!

If you are asking why the salt. The salt is there so you can sprinkle it on onions or cucumber. In my country there’s a tradition of serving salt and onions with bread. Usually you also serve charcuterie and sour cream or fresh cheese. So this is a platter inspired by tradition. Instead of red onion you can use spring onions.
