we went to Croatia for our vacation. And I got my paws on some family recipes and some that I collected over the years. I am now starting to digitalise them, so they are easier to share between us girls, and also I will be able to share them with you 🙂 . The first one I am going to share is cucumbers filled with cheese. Fresh cheese to be precise. I opted on this one, since I needed something low carb for my dinner. And this one is just perfect! Light, fresh and low carb.
Ingredients
Cucumber
salt,
pepper,
fresh cheese or cream cheese
parsley
This recipe is sooo simple. And takes no time to make. You can use it for appetisers, and the cukes are even better when you filled them and leave them in the fridge for a bit to completely cool down.
First we will wash the cucumber and snip off the ends. Then half the cucumber and use a spoon to take out the seeds. Salt and pepper it well, and leave it for a couple of minutes while you make the filling.
For the filling simply combine the cheese with salt and pepper to your taste. You can add a bit of sour cream if the cheese is not creamy enough. Or you can use this fresh cheese dip . Just make it a bit more firm in consistency.
The last step is to fill the cucumber with your cream. You can cut it out how ever you like before or after filling. And also tap it dry a bit, so it is not watery. You can use the spoon to fill it to fill it or pipe in the filling. The choice is yours.
When the cucumber is filled, then sprinkle the chopped parsley on top. Of course instead of chopping the parsley you can just push a sprig of parsley into the top of the filling. Sky is the limit here 🙂 Enjoy!
