Meat Pasta Sauce with fresh herbs

Hi,
meat pasta sauce is the first thing that I cooked for my family. That was a long long time ago, when I was 12 years old. So this is now a truly perfected recipe that everyone enjoys. It’s simple to make and does not take too much time.

Needed for Meat Pasta Sauce

500g of minced meat (mixed meat, beef or turkey)
1 medium onion
1 L tomato puree or juice (If using juice don’t add water)
600 mL water
1 tsp salt (don’t throw everything at once, adjust it according to the tomato salt contents)
dried oregano
fresh herbs (basil, parsley, chives)
dried paprika, cayenne pepper, pepper
2 Tbsp freshly grated parmesan cheese
1 Tbsp oil (can use olive oil)

First finely dice the onions and saute them on oil. Then add the meat and mix it well with onion. roast the meat so it gets a bit of colour and cooks through. Then add tomato puree and water. Add 1 tsp paprika, a bit of cayenne and pepper according to your taste. Add dried oregano and let simmer for 10 minutes. While the meat pasta sauce is simmering cook pasta till almost aldente and finely chop fresh herbs. Add the herbs and simmer for 5 minutes. Mix in the 2 Tbsp of grated cheese.
Then drain the pasta and add sauce to pasta. This makes a big amount of sauce, so don’t just thug it all in pasta. The rest can be put to fridge or freezer and used for another lunch or dinner. Mix pasta and sauce and let it rest for 5-10 minutes so that pasta finishes cooking in sauce. You don’t have to put it back on flame, just let the pasta sit in sauce and absorb the flavours.

Then serve, garnish with basil sprig and enjoy! 🙂
