White chocolate truffles with cherries

White chocolate truffles

Hi,
this is a simple no-bake recipe. White chocolate truffles are extremely easy to make. And the kids can help you make them. The sweet cherries are there to provide a bit of colour and a bit of contrast to the sweet buttery truffles.

Needed for white chocolate truffles

100 g butter biscuits (petit beurre)
100 g white cooking chocolate (couverture)
25 g butter
3 cl milk
cherries

Mill the biscuits or crush them. If you make crush version biscuits will provide a bit of crunch. I go with the crushed version, since I’m a crunch person. Then melt the chocolate over bain marrie. Together with milk and butter. I don’t put any extra sugar in this recipe cause white chocolate is sweet enough. When chocolate is melted mix everything with the biscuits and leave to cool down. It should still feel warm but not burning. Take teaspoon of the mixture and press and roll it into a ball. Leave the truffles on a plate or cooling rack to cool down completely. Arrange them on a cake stand alternating white chocolate truffles with sweet cherries. Serve and enjoy!

Possible modifications

This is a base recipe for white truffles. It is easy to modify. You can add the crushed nuts to the biscuits. I would suggest adding pistacios so that there is a mixture of colours. You may even freeze small balls of buttercream or some other filling and fill them with a cream. Also you can use coconut milk and fat and make a coconut version. I didn’t roll my into crumbs or nuts, but you can also roll them into nuts, milled biscuits, white chocolate shards, or coconut. Use your imagination to make delicious white chocolate truffles 😀 . You can also enhance the flavour of them by adding flavourings, and for adult version try adding rum or coconut rum. The choices are truly endless.
